Raise your hand if you love tacos! Well, I can’t see you but im sure you raised your hand otherwise why else would you click on this blog? So something i’ve come across lately that I love is shrimp, I don’t know why I always avoided shrimp, I think because they are higher in sodium and cholesterol I always thought they were bad. This is not the case, while yes, they are higher in sodium they are also a very lean source of protein! So I came up with this super healthy and easy recipe for shrimp tacos and avocado lime dressing!
For the shrimp:
4oz medium de-veined shrimp
1 tsp coconut oil
2 tablespoons of lime juice
1/4 tsp chipotle Mrs dash seasoning
1/4 tsp paprika
1/4 tsp of salt
1/4 tsp of pepper
1 tsp minced garlic
Directions:
Place oil and shrimp in pan on medium/high heat let shrimp get slightly pink. Add in lime juice and seasonings. Simmer and stir occasionally.
Avocado ranch dressing: (makes about 8 servings)
1 avocado
1/4 cup lime juice
1/2 teaspoon garlic
1/8 tsp pepper
1/4 tsp of ssalt
3 tablespoons of coconut oil
1/4 cup water
1/8 tsp cumin
Directions: Add all ingredients into food processor or blender, process until smooth. Refrigerate for up to a week.
Extras:
2 Mission carb balance flour tortillas
2 slices of fresh pineapple (diced)
shredded lettuce
fresh pico de gallo (optional)
Next take shrimp and place on 2 “Mission carb balance Flour tortillas”. Plop a little dressing on both and add toppings! Enjoy!!
