Healthy pumpkin waffles!

Are you that basic chick who likes pumpkin spice EVERYTHING? Well I am! except pumpkin pie.. for some reason I don’t really care for plain pumpkin pie, I know I know…. i’m weird. LOL. Give me pumpkin cheesecake, pumpkin cookies, pumpkin coffee, pumpkin ice cream (everything bad basically.) So since its the pumpkin spice and everything nice season I figured I come up with a nice healthy little alternative that still gives me that pumpkin flavor without all the crazy calories.

So here we have it- pumpkin waffles for the win!

These are SO good. So good that you won’t even believe they are healthy.

Macros per 1/3 recipe

Calories: 135

Total Fat:2.5 g

Carbohydrate: 14g

Protein: 13 g

Ingredients:

3/4 cup egg whites

1/2 cup Pumpkin puree

1/2 cup Old fashioned oats or quick oats

1/4 cup of vanilla whey/ or cinnamon protein powder

1 tsp vanilla extract

1 tsp baking soda

1 tsp pumpkin pie spice

1/4 tsp cinnamon

Mix or blend everything together until there is no chunks left! Place on waffle maker and cook accordingly to your waffle irons instructions.

I like to top mine with almond butter and sugar free syrup! Or you could make a clean cream cheese frosting:

1 tbsp low fat cream cheese

1 tsp vanilla protein powder

1 tsp almond milk

1 tsp vanilla extract
