Healthy Pumpkin French Toast Recipe

Want a super healthy, but delicious breakfast recipe? This pumpkin french toast will have you completely fooled into thinking your eating a super sugary yummy breakfast. But this recipe is so clean that you could even eat it getting ready for a bodybuilding show!

Eating healthy doesn’t have to taste like bird food, i’ve made this recipe for my boyfriend who hates anything healthy and he absolutely LOVES it!  I would not consider this a “protein french toast” recipe so you will need to add more protein to this meal, I always eat it with 6 egg whites (25 grams of protein). You could easily add a scoop of protein powder to the egg wash as well to make it more macro friendly.

Macros for french toast :

P- 10 grams C-25 grams Fat- 7.5 (with almond butter)

*** If you add protein powder it will be about 25 grams of protein

Ingredients:

2 pieces of ezekial bread

1/4 teaspoon nutmeg

teaspoon pumpkin pie spice

teaspoon of cinnamon

1 packet of stevia

1 egg white

1/2 scoop of protein powder *** Optional if you want to increase protein content****

1/4 cup of unsweetened vanilla almond milk

1 teaspoon vanilla extract

1 tablespoon pumpkin puree

Toppings:

almond butter

smuckers sugar free syrup

 

Directions:

Combine all spices and ingredients and whisk together til smooth.

Place bread in the wash and coat front and back.

Heat pan to medium heat and place bread on stove 2-3 minutes on each side.

Top with whatever you want! I melt almond butter on mine and use a sugar free syrup. But you could top with fruits or nuts whatever you like really!
